Quick Keto Quiche

      This one isn't too cajun but the kids requested quiche this morning so quiche it is . I'm so blessed in the fact that my kids are enjoying lots of my keto goodies. When I heard how beneficial the keto diet could be to brain health and function I immediately thought of slowly introducing it to my baby boy . Trey , is 8 and is a year in to his diagnosis with an intracranial arachnoid cyst . He has a cyst in his brain measuring 10.5cm . As of now he suffers from near blindness in his right eye and mild vision loss in his left . He has had seizures in the past and occasionally gets horrible migraines . Surgery offers more risks than benefits at this point so for now we just make sure his symptoms are kept at bay. As long as the cyst doesn't grow he shouldn't have any more symptoms or complications than he already does :) . He absolutely loves my keto kookin' and I'm excited that it may be beneficial to him through his life !!
And now for the quiche ....






 Quick Keto Quiche
Keto Macros per serving ( entire dish is 4 servings ) Calories 462g Fat 42g Protein 27g Carb 2

Ingredients

3 Tblsp butter
6 Jimmy Dean Precooked breakfast sausages
5 eggs
1 tbsp mayo
1 tsp yellow mustard
Salt
Pepper
Chopped dried onion
1/4 cup shredded mozzarella
4 pieces Oscar Meyer smoked ham
1/4 cup shredded mild cheddar

Preheat oven to 350

I began with a 1.2 quart Pyrex casserole dish . I melted my 3 tbsp butter and poured into dish .


I then lined the dish with my Jimmy Dean sausage. I only used 4 pieces because my 15 year old Jayda doesn't like sausage ( she's an alien of sorts lol )

Next I used my Oster blender to blend the eggs , mayo , mustard , salt, pepper , and onions.

I poured 1/2 of that mixture over the sausages.

Sprinkling my 1/4 cup mozz on top of that.

I then lined it with my four pieces of ham.

Poured the rest of the egg mixture.

Covered in Cheddar cheese.

And baked for 35 minutes !

This Stuff !

        One thing I can't get over is how amazingly satisfied my appetite is on this WOE . Yes for the first couple weeks I could've killed for a grilled cheese , but now the thought of all the carbs included in my once all time favorite makes me cringe . I've become a keto investigator of sorts at the grocery. Going over the labels with a fine tooth comb ( Promises of " healthy " and " low carb " shouldn't be trusted y'all ; read the labels ) . I've even become highly judgmental when it comes to what I allow my children to eat. No I will not force this WOE on them ,but I can certainly limit their intake of manufactured garbage. What changes have you noticed in your shopping habits ? And now y'all ; let's get to the goo stuff (literally) ! I've made the following recipe a few times since starting keto and will continue to make it often due to its great popularity among my husband and kiddos ..



Bobbi's To Die For Bacon Wrapped Stuffed Chicken
Keto Macros ( per breast / huge portion ) Protein 55g  Calories 530  Fat 31g  Carbs 2g

Ingredients Per Serving

1 large boneless skinless chicken breast
1/2 Fresh Cajun Sausage (For a milder version use Fresh Green Onion Sausage)
2 Medium Sized Button Mushrooms
2 Slices Bacon
1/4 Cup Shredded Mozzarella
Salt
Black Pepper
Garlic Powder
Onion Powder or dried onions
Cajun Seasoning

Preheat oven to 375

Start by butterflying your chicken breast along the thinnest side ..


Once chicken is opened up season with Salt , Black Pepper, Garlic Powder, Onion Powder, and Cajun Seasoning...


Slice mushrooms and place desired amount on one side of open chicken breast ...


Now squeeze the filling out of 1/2 link of fresh sausage and pat down on top of mushrooms.


You are now ready to close the chicken and wrap with your bacon strips ..


Place on a wire rack pan or some type of roasting pan that has a rack. Bake for 45 minutes. 


Remove chicken from rack and place in the bottom of the pan . Cover with shredded mozzarella. Bake for another 5-10 minutes of until cheese looks perfect :)

Let's Get Kookin'

         Cooking is a passion. My passion began growing up in southeast Louisiana where my great grandmother played a huge role in my upbringing. There was no playroom , there was a kitchen. We had no alarm clocks, but when the sweet aroma of bacon frying down in a cast iron skillet on top of the gas stove swept through the house we knew the day had started. Gosh how I miss those smells . Not being tall enough I would pull a chair up to the counter and help with various tasks. My cooking skills were not the only thing learned in that kitchen. Life lessons so valuable are hard to find in this modern age.
         I can only hope every time my little ones join me in the kitchen they are not only learning how to be great cooks, but are gaining valuable lessons and priceless memories that will help carry them throughout life.

Some family dynamics before we go ..

         I became a single mother at the age of 18 . My beautiful Jayda is now 15 years old . When she was 3 I met my now husband of 10 years in August, Michael. Together Michael and I had McKenzie(9) and Trey(8). We raise our children in southeast Louisiana where Mike works in the oil and gas refineries. His long hot days make for one hungry man at supper time . My cooking skills come quite handy with this and I often joke that he married me for that sole reason 😜. I spent 5 years in a wheelchair due to tumor removals and reconstructive surgeries on my leg. Over the 5 years I put on 80 pounds. I gained a small human. In the attempt to become healthier I researched and researched many diets and WOE ( way of eating ) . I stumbled upon information about the Keto way of life and began integrating it into my life. 2 months in I am 15 pounds down and have quite a few to go . Other than the weight loss , which is great because I have failed at many many diets in the past, I now have more energy and feel overall healthier . I invite you to join me on this journey . I will also share with you all of my favorite recipes !

And last but not least here is today's recipe..

Forth of July is coming up so I figured my favorite party recipe would be fun to share ..
For this recipe I used my oster food processor but any food processor / blender will do ..

Kickin' Kajun Keto Ranch !!  

Keto Macros  Protein <1g  Calories 145    Fat 12g       Carbs <1g   ( PER ONE OUNCE SERVING)

2 Cups Mayo
1/4 cup heavy cream
1/4 raw onion
1 tbsp Capers in vinegar (include the juice!)
2 tsps minced garlic
1 tsp dillweed seasoning
2 tsps black pepper
1 tsp salt
1 tsp cayenne pepper ( you can gradually add this until level of desired heat is reached or you can dismiss it entirely for an amazing mild ranch 🙂)


Blend in food processor until everything is well integrated .. Chill for an hour and serve in a bowl surrounded by your favorite Keto staples ( meats, veggies, cheeses ) . I also keep a jar of this in my fridge to enjoy on my salads !!!
