Best Ranch Dressing Ever !
Keto Macros ( Per 2 Tablespoons )

Calories 140
Ingredients
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup heavy cream
2 tablespoons white distilled vinegar
2 cloves garlic minced
2 tablespoons dill
1 tablespoon parsley
1 teaspoon chives
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
Whisk together vinegar and everything listed below it on ingredients list . This will help bring out the flavors in the dried spices.  Whisk for a couple minutes and then mix in mayo, sour cream, and heavy cream. Mix until ingredients look good and combined. Place in storage container with lid. ( mason jar, tupperware, etc. ). Keeps in fridge for 5 days 😊

Keto Cajun Asian Shrimp Delight



Keto Cajun Asian Shrimp Delight
Keto Macros : Per serving ( recipe is 4 servings )

Ingredients :
-1/3 cup soy sauce ( for this recipe I used Yock-A-Mein Soy Sauce as it only has 0.2g carbs per serving. ) 
-2 tbsp monk fruit ( I used Monk Fruit In The Raw )
-1 cloves garlic minced
-1 tsp ginger minced or ¼ tsp ground ginger
-1 tsp Louisiana Hot Sauce ( or more for spicier version )
-1 lb jumbo shrimp tail on (about 10 to 12 shrimp)
-2 tbsp fresh parsley chopped
-1 tbsp unsalted butter

1. In a medium size bowl, whisk together the soy sauce,  monk fruit, garlic, ginger and hot sauce.
2. Add the shrimp to the bowl and toss well making sure the shrimp is coated in the sauce. Refrigerate and let marinate for 25 minutes.
3. Heat a skillet over medium high heat with butter and add the shrimp to the skillet, reserve leftover sauce. Cook on both sides about 2 to 3 minutes per side until shrimp starts to turn pink and is cooked. Garnish shrimp with fresh parsley. Remove shrimp from skillet and set aside.
4. Pour remaining sauce in the skillet and cook for a couple minutes until sauce reduces and thickens. Turn off skillet. Mix shrimp back in stir and serve !

Krazy Keto Peanut Butter Cookies


  There's something about peanut butter cookies that takes me back to my childhood. My great grandfather roasting fresh picked peanuts in Granny's gas oven. Those are the sweet sweet memories that bring a smile to my face. Being a peanut butter addict brought on many fears w hike entering into my keto journey . But I quickly learned while it may not be what some consider "strict keto" ; I could continue to enjoy it in moderation .  The following is a recipe for KETO FRIENDLY peanut butter cookies. Hope you enjoy !

Krazy Keto Peanut Butter Cookies

Ingredients
1 cup peanut butter (no sugar added)
1/2 cup granular erythritol
1 large egg 

Preheat your oven to 350 degrees. Before using granular erythritol some like to make it finer by blending but this is not required. Combine all ingredients and mix well. Now make 1 inch balls with your cookie dough. Press down with fork if you'd like that iconic pbcookie look . Bake for 10-15 minutes or until edges begin to brown . Cool on baking rack if available .  Welcome to keto cookie heaven :)

Amazing Dip All Cajun Remoulade Sauce !

Dip All Cajun Remoulade Sauce

INGREDIENTS
1 1/4 cups mayonnaise ( I use Blue Plate )
1/4 cup mustard (Creole mustard if possible)
1 Tbsp sweet paprika
1-2 teaspoons Cajun or Creole seasoning
2 teaspoons prepared horseradish
1 teaspoon pickle juice (dill or sweet, your preference)
1 teaspoon hot sauce
1 large clove garlic, minced and smashed

Mix all ingredients together and refrigerate at least one hour before serving so all of the flavors can blend well together .

Pan Fried Catfish With A Crawfish Cream Sauce

In Louisiana we have 5 seasons Spring, Summer, Fall, Winter, and CRAWFISH SEASON. Any Louisianan can tell you when they’re coming, when to get the big ones, and when the price per pound will drop. I’m pretty sure most of us learned to peel crawfish before we learned our ABCs.  I mean it was either they teach us or spend the entire crawfish boil peeling crawdads for us tiny tots. Today I’m going to share a recipe with this local delicacy ( already peeled like ya mom and dem use to do for ya )..


Pan Fried Catfish With A Crawfish Cream Sauce
Keto Macros (per 1 filet and ¼ cup sauce) Calories 230 Fat 31g Protein 15g Carb 2g

Ingredients
Catfish Filets ( wild caught are your best bet )
1 Cup Peeled Crawfish Tails ( can be fresh or found frozen in the seafood section of your grocery )
3Tbsp Butter
1 Cup Heavy Whipping Cream
2Tbsp Grated Parmesan Cheese
1tsp Minced Garlic
1Tbsp Cloves
Cajun Seasoning
Onion Powder
Salt
Pepper

Season your filets with Cajun Seasoning, Salt, Pepper, and Onion Powder. In a medium sized skillet on medium heat melt 1tbsp butter . Make sure it spreads evenly across pan surface. Once the pan is good and hot but before the butter browns place your filets in the skillet. Cook filet for about 5 minutes or until bottom is a golden crispy color. Flip. Cook other side the same.  Once your filets are completely cooked remove from skillet and turn skillet down to low-med heat. Do NOT clean the skillet lol. Place remaining 2 tbsp butter in skillet along with the minced garlic and cloves. Stir around enough to get the debris from the bottom of skillet. Add in your crawfish tails . Let those simmer down for just a minute. Stir in your heavy whipping cream . Cook down for a few minutes ( until cream begins bubbling real nice ) . Taste your sauce to see if any more salt or pepper may be needed . Once your satisfied with the taste add in your parmesan cheese . Stir real nice for another couple minutes . Plate fish .. Cover in about ¼ Cup of your cream sauce … Garnish with some fresh chopped green onion if desired. Enjoy!!!!

My Mason Jar Praline Dream Ice Cream

       Ice cream seems to bring out some of our best emotions . Happiness , Joy , and love are just a few that you feel when enjoying a bowl of your favorite creamy treat. I've seen others sharing their favorite mason jar ice cream recipes and I thought I'd share one of my own . I figured I'd stick to my roots and make a southern praline version :) Hope you all enjoy !

Mason Jar Praline Dream Ice Cream
Keto Macros (per 1/2 cup prepared) Cal 300
Protein 5g  Fat 25g Carb 2.5g


Ingredients
(For praline mixture)
1/2 cup pecan halves
1.5 tbsp butter
1.5 tbsp sweetener
1 tbsp heavy whipping cream

(For ice cream)
2 Cups Heavy Whipping Cream
2 tbsp sweetener
2 tsp vanilla extract
Pinch of salt
YOU WILL ALSO NEED A QUART SIZE MASON JAR.

We are going to start with the candied pecan mixture . Melt butter stovetop on med-high heat . Add pecans and toss to coat.  Add sugar and hwc. Stir until caramelized. Spread on wax paper to cool completely.  Once cooled place in freezer while you prepare the ice cream mixture .

In a 1 QUART (32oz) mason jar add 2 Cups Heavy Whipping Cream, 2tbsp sweetener (I used swerve) , 2tsp vanilla extract, and pinch of salt .. Now get ready for a little shake shake shake .. Place lid on jar and shake 4-5 minutes until cream has thickened . Place in freezer for 30 minutes .. Remove pecan mixture . Fold wax paper over and use cup to crush pecan mixture to desired thickness. Stir into ice cream mixture . Freeze 3-4 hours or until completely frozen . Grab spoon and enjoy . Remember macros are for 1/2 cup :)

Not Yo' Momma's Dirty Rice (RICE FREE)

     Dirty Rice is a staple here in the south. Shoot all things rice consumed my diet growing up. One of the hardest parts of going keto was thinking about what I would do without all that rice. I soon seen where mad geniuses everywhere were using cauliflower as a rice replacement .. Amazing .. I knew I must make some keto dirty rice...

Not Yo' Momma's Dirty Rice (Rice Free)
Keto Micors Cal 395 Fat 24g protein 35g Carbs 1.5 ( Per 1.5 cups prepared )

Ingredients

1lb Ground Beef

1lb Ground Pork

Large head of cauliflower (blended in food processor to about the size of rice )

1 Can Beef Broth

1 Tablespoon Butter

2 small onions chopped fine

2 stalks green onion chopped fine

2 tbsp Minced Garlic

Salt

Pepper

Creole Seasoning
In a large skillet add your beef, pork, all onoins, and minced garlic. Brown Meat completely then add can of beef broth , butter, salt , pepper , and Creole seasoning . Stir well .. Add your riced cauliflower. Stir completely . Taste to see if you need more seasoning . Once its seasoned like you enjoy . If your skillet is oven proof leave mixture in there and place in oven on 325 . If not just transfer to casserole dish or pan and place in oven . Bake for 30 minutes ..
